I’ve been using this recipe for years and it never fails.

I get a whole turkey, take the legs off to bone and stuff them with sausagemeat. Frozen turkey works well as you can thaw/brine it at the same time.

The stock after 8 hours. So much inedible meat on a turkey when you bone it. Perfect for stock and then you simmer your stuffed rolled legs In it for another few hours in it. More flavour.
